Pork Tenderloin with Apples

2 Pork Tenderloins

2 cloves Garlic - Mashed

Salt & Pepper

2 T. vegetable oil

1 cup chicken or beef broth

1 cup apple cider

3 medium cooking apples, peeled, cored and sliced

1/3 to 1/2 cup brown sugar, or to taste

3 T. butter

Dried cranberries, optional

Preheat oven to 400 degrees. With the tip of a sharp knife, make deep slits all over the tenderloin and insert the garlic. Season with salt & pepper.

Heat the oil in a skillet on medium high heat and sear the tenderloin well on all sides (about 10 - 15 minutes)

Remove the tenderloins from the skillet (do not discard the juices in the skillet) and place in a roasting pan. Add the broth and apple cider to the roasting pan. Cook in the oven at 400 degrees for about 10 -15 minutes or until the internal temperature reaches 148 degrees.

While the tenderloin is roasting in the oven, cook the apples slices in the same skillet (with the remaining oil and juices) that you used to brown the tenderloin. Sauté until apples start to soften. Add the brown sugar and butter and cook until apples begin to caramelize.

After the tenderloins have cooked in the oven for 10-15 minutes, remove from oven and cover with foil and let rest for 10 minutes. The tenderloins will continue to cook while they are resting. Slice the tenderloin into 1/4 inch slices and serve with the apples.
