2# Sliced Bacon

2# Fresh Pork Sausage

1/2c TN River BBQ Sauce, any variety

2T Pork BBQ Rub seasoning, any variety


*With 12 slices of raw bacon, "weave" them together in a square of 6x6 slices, as you would a "lattice-style" pie crust.

*Chop the rest of the raw bacon, and cook until crispy.  Drain, and reserve drippings for another use.

*Mix BBQ sauce into the sausage with your hands until well blended.

*Spread the fresh sausage mixture out onto the bacon lattice, covering it with one large, square "patty," leaving about 1" of space around the edges.

*Sprinkle entire square of sausage to taste with BBQ Rub seasoning.

*Spread chopped bacon evenly onto sausage mixture.

*Starting from one side, roll carefully into a log, with the bacon lattice on the outside.

*For best result, smoke Bacon Roll at about 250F for about 2.5 hours, or until it registers at least 155F internally.  Optionally, you can bake the Bacon roll at 250F for the same amount of time.

Let cool at least 20 minutes.  Slice and serve with rolls, biscuits, or even on a stick!
