Ham and Broccoli Quiche



1 pkg. frozen chopped broccoli
1 medium onion, chopped
2 T. butter
1 stick butter
¼ cup flour
1 cup milk or half & half
½ tsp. salt
1/8 tsp. pepper
4 eggs beaten
1 cup diced ham (I use Boar's Head)
¾ cup shredded Swiss cheese
¾ cup cheddar cheese
½ cup parmesan cheese
1 deep dish pie shell or two regular pie shells

Cook broccoli according to package directions. Meanwhile sauté the onion
In 2 tblsp. butter. In a medium saucepan, melt the stick of butter. Stir in the flour, and then add milk or half and half slowly. Cook until the mixture has thickened into a white sauce. Add the salt & pepper and remove from heat.
Add the eggs, cheddar and Swiss cheese, ham and drained broccoli. Stir until the cheese has melted.
Pour into an unbaked pie shell and bake at 350 degrees for about 30 minutes. Sprinkle with parmesan cheese and bake an additional 10 minutes more.

Serves 4-6
