Spicy Turkey Chorizo



1 tsp. dark brown sugar
1 tsp. chipotle (or generic) chili powder
1 tsp. smoked paprika
1 tsp. ground cumin
½ tsp. ground coriander
1 lb. ground turkey (85/15 lean to fat ratio)
1 poblano chili, roasted, peeled, seeded and diced fine
¼ cup chopped fresh cilantro
1 TBLS apples cider vinegar
1 TBLS minced garlic
1 TBLS canola or coconut oil, for frying


Combine the brown sugar and spices in a medium bowl. Add the remaining ingredients (except for the oil) and with your hands, combine with the spices. Shape into about 3" patties. Heat the oil in a pan over medium heat. Add the patties and sauté until golden on each side and cooked through, about 8 minutes total. Drain on a paper towel and serve immediately.

Servings: Makes 12 Patties
