Mexican Cornbread Casserole



1 lb. lean ground beef
1 yellow onion diced
4 eggs
1 1/2 cups milk
1/2 cup vegetable oil
2 packages Jiffy cornbread mix
14 oz. can cream corn
7 oz. can of chopped green chilies
2 cup. grated Velveeta cheese
1 fresh jalapeno, diced


Place beef and onion in a skillet and heat until meat is cooked, let cool.
In separate bowl whisk together eggs, milk, vegetable oil.
Add cornbread mix, corn, green chilies, cheese, jalapeno.
Add ground beef and onions in the bowl.

Spray 9X13 casserole dish with cooking spray, pour into dish. Bake at 350 degrees for 45 minutes to an hour
