Ingredients:
2 1/4 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon garlic
1 egg
8 oz milk
3 oz vegetable oil
1-1/2 cups Buffalo chicken dip (See note)
Blue Cheese crumbles
Directions:
Mix the muffin components together first by combining the wet ingredients and dry ingredients separately, then stir the wet into the dry. When combined, add 1 1/2 cups chicken 'dip' so as not to break up the chicken too much. Scoop into muffin cups then top with more blue cheese crumbles.
Bake at 325 F for convection or 350 F for standard oven for 22-25 minutes; let stand 5 minutes and enjoy. (Makes 6 4-1/2 oz. muffins)
NOTE: Make your favorite buffalo chicken dip, or find one online. Most recipes use chicken, wing sauce and blue cheese.
