APPLE, LEEK & CHEDDAR QUICHE
CUSTARD 4 Large or Extra Large Eggs 2 cups Half & Half 1 tsp. kosher salt 1/4 tsp. white pepper Freshly grated nutmeg
FILLING 2 leeks, white parts only – sliced 2 TBLS butter 1 tsp. dried tarragon 2 Granny Smith Apples – peeled, cored, thinly sliced 1 cup extra sharp cheddar cheese – grated
Prebaked 9-inch pie shell.
Preheat oven to 425°F. Whisk all ingredients for the custard together.
In a small sauté pan, melt butter. Add leeks and tarragon. Cook until the leeks begin to soften and become fragrant. Add leeks to the prebaked shell. Top with apples and cheese. Pour custard over all the ingredients. Cook at 425°F for 15 minutes. Reduce oven to 350° and bake an additional 30-40 minutes until quiche is set.
Allow to cool to room temperature before slicing.
Makes 8 servings.
